What is a Snickerdoodle?

Snickerdoodles are, in fact, cookies! Theyโ€™re known for being delicate on the inside yet crispy and sweet on the outside, as theyโ€™re usually covered with a combination of cinnamon and sugar.

Since Dutch-German immigrants introduced Snickerdoodle cookies to the United States, theyโ€™ve been so loved and welcomed. Hence, many recipe variations for Snickerdoodle were invented over the years, including the Snickerdoodle banana bread.

Apart from this bread recipe, you can also explore other Snickerdoodle-inspired dishes, such as these Snickerdoodle crepes.

๐Ÿฅ˜ Ingredients

Snickerdoodle Banana Bread ingredients.

The ingredients in this banana bread recipe are so common that you most likely already have everything you need at home. Enjoy this delicious treat without needing to go on a quick trip to the grocery store.

  • Bananas: The riper they are, the better. Bananas add natural sweetness and moisture to the bread.
  • All-Purpose flour: As the base of this recipe, the flour will give your bread firmness and chewiness.
  • Baking soda: Baking soda works as a leavening agent, causing the bread to rise. It helps your bread be extra fluffy, so don’t skip this ingredient.

See recipe card for quantities.

๐Ÿ”€ Substitutions

Butter: You can substitute the butter with an equal amount of coconut oil if you prefer a dairy-free version.

White sugar: If you want a richer flavor, use coconut sugar or brown sugar instead of regular white sugar. Just use these alternatives in equal amounts and enjoy an extra caramel-like flavor for your bread.

Milk: For a dairy-free option, you can substitute almond, soy, or oat milk instead of whole milk.

๐ŸŒˆ Variations / Options / Add-Ins

Hereโ€™s a list of twists you can try to add more flavor variations to this bread or make it fit your dietary preferences:

  • Chocolate Chips: You can never go wrong with pairing chocolate chips and banana bread. Mix the chocolate chips with the batter or sprinkle them on top for extra visual appeal.
  • Muffin Version: Divide the batter into muffin-sized portions for an easy party or afternoon snack. Note, though, that you have to adjust the baking time accordingly. Muffins generally only take 25 minutes to finish baking.
  • Cream Cheese Swirl: Another underrated but must-try variation is adding a cream cheese swirl in the banana bread batter. Just mix softened cream cheese, sugar, and vanilla extract, then swirl the mixture into the batter to create a marbled effect.

Another Snickerdoodle-inspired dessert you shouldnโ€™t miss is the eggnog Snickerdoodle cookies.

๐Ÿฅ„ Equipment Needed / Helpful Tools

You donโ€™t need fancy tools to get this Snickerdoodle banana bread ready. Just gather these 3 essentials below, and youโ€™re good to go!

  • Loaf pan: A rectangular-shaped baking pan ensures your bread can maintain its shape while baking evenly.
  • Electric mixer: This tool will help you mix your ingredients. You can use a whisk as an alternative, but mixing your batter will take longer.
  • Toothpick: Youโ€™ll use this to check if the bread is thoroughly cooked.

๐Ÿ”ช How to Make Snickerdoodle Banana Bread

Once you have everything prepared, you can start the baking process.

Set your oven to 350ยบF. Preheating is very important in ensuring that your delicious bread-baking journey is going to be successful, so donโ€™t skip this step.

Step 2: Grease your loaf pan

Grease your loaf pan using butter or vegetable oil with the help of an oil brush or cooking spray.

Step 3: Mix dry ingredients

Combine the flour, a tablespoon of cinnamon, salt, and baking soda in a small bowl. Set them aside momentarily as you proceed to the next step.

Step 7: Bake time

Bake the prepared batter for 50-55 minutes and check it every 5 minutes once you hit the 45 minutes mark. If you notice that the top is browning too much, lightly cover your pan with tinfoil towards the end of the baking time.

Remember to test the doneness of the bread with a toothpick. When the toothpick comes out clean, that means the bread is fully done cooking.

Allow the bread to cool for 10-15 minutes before removing it from the loaf pan and serving.

โ“ Recipe FAQs

What happens when you put too much banana in banana bread?

Putting too much banana in your Snickerdoodle bread affects its texture and flavor. Since bananas are known for their high moisture content, adding an excessive amount would make your bread too compact, possibly resulting in undercooked portions.

How do you keep banana bread moist when baking?

To keep your banana bread moist, avoid overmixing your batter. Just mix your ingredients until theyโ€™re well combined to ensure that your bread doesnโ€™t get too hard when cooked. Additionally, make sure to use baking soda instead of baking powder.

How long can banana bread sit out?

Snickerdoodle banana bread can sit out at room temperature for 2-4 days as long as it’s properly wrapped. Keep in mind, however, that your bread must be completely cooled down before wrapping it.

This banana bread was tasty but I wasn’t happy with the large amount of Cinnamon Sugar on the top.
There was so much cinnamon sugar that when you turn the bread over to get it out of the pan about half of it failed to stay on the bread loaf & ended up on the counter.
I easily could have used HALF of the suggested amount and it might have been better and more attractive than a solid “layer” of cinnamon sugar.

    • I’m glad you liked the taste of the bread, but sorry that the topping was too much. Hopefully it works better for you next time when you use half of the suggested amount of cinnamon and sugar.
