Snickerdoodle Banana Bread

Ingredients
- 1 1/2 cups All-Purpose Flour
- 1/2 teaspoon Salt
- 1 1/2 teaspoons Baking Soda
- 2 tablespoons Cinnamon divided
- 1/4 cup Butter softened
- 1/4 cup Vegetable Oil
- 2 Medium-sized Bananas overripe
- 1 Egg
- 1 cup White Sugar
- 1 cup Milk
Instructions
- Preheat oven to 350 degrees F.
- Grease a loaf pan and set it aside.
- In a small bowl, whisk together the flour, 1 Tablespoon of cinnamon, salt and baking soda. Set the bowl aside.
- In a large bowl, beat together the butter, oil and 3/4 cup of the white sugar until it's light and fluffy.
- Beat in the bananas and egg, and then the dry ingredients, followed by the milk.
- Pour batter into the prepared loaf pan.
- In a small bowl, combine remaining 1 Tablespoon cinnamon and 1/4 cup of white sugar, and then sprinkle it over the top of the batter.
- Bake for 50-55 minutes or until an inserted toothpick comes out clean.
This banana bread was tasty but I wasn’t happy with the large amount of Cinnamon Sugar on the top.
There was so much cinnamon sugar that when you turn the bread over to get it out of the pan about half of it failed to stay on the bread loaf & ended up on the counter.
I easily could have used HALF of the suggested amount and it might have been better and more attractive than a solid “layer” of cinnamon sugar.
I’m glad you liked the taste of the bread, but sorry that the topping was too much. Hopefully it works better for you next time when you use half of the suggested amount of cinnamon and sugar.
