Ingredients

  • 1 ½ cups All-Purpose Flour
  • ½ teaspoon Salt
  • 1 ½ teaspoons Baking Soda
  • 2 tablespoons Cinnamon divided
  • ¼ cup Butter softened
  • ¼ cup Vegetable Oil
  • 2 Medium-sized Bananas overripe
  • 1 Egg
  • 1 cup White Sugar
  • 1 cup Milk

Instructions

  • Preheat oven to 350 degrees F.
  • Grease a loaf pan and set it aside.
  • In a small bowl, whisk together the flour, 1 Tablespoon of cinnamon, salt and baking soda. Set the bowl aside.
  • In a large bowl, beat together the butter, oil and ¾ cup of the white sugar until it's light and fluffy.
  • Beat in the bananas and egg, and then the dry ingredients, followed by the milk.
  • Pour batter into the prepared loaf pan.
  • In a small bowl, combine remaining 1 Tablespoon cinnamon and ¼ cup of white sugar, and then sprinkle it over the top of the batter.
  • Bake for 50-55 minutes or until an inserted toothpick comes out clean.

Notes

If the top of the bread is browning too much, lightly cover it with tinfoil towards the end of the baking time.
