What makes a quiche a quiche?

Quiche is a savory French egg tart with delicious fillings on top of a flaky pie crust. The most common quiche fillings are ham, bacon, sausage, some kind of cheese, and veggies.

Making a quiche is an easy way to use up leftovers, too! You can take whatever leftover veggies or meat you have in the fridge, load them on a pie crust, pour egg mixture on top, and bake them into a delicious quiche that everyone will enjoy.

🥘 Ingredients

Air Fryer Quiche with Sausage ingredients.

You will need only 6 basic and easy to find ingredients to make this recipe.

  • Pie crust: I used a store bought 8-inch pie crust for less hassle.
  • Breakfast sausage: It’s cheap and flavorful. You can use smoked, spicy, sweet, or any variety that you like.
  • Shredded cheese: I used pre-mixed cheese but you can pick any that you lilke. Cheddar cheese is great, and perhaps you can toss in some mozzarella for some stretch.
  • White onion: You want to mince them finely for an even distribution of flavor throughout the quiche.
  • Eggs: I used 6 fresh large eggs. You want to crack them one by one in a small bowl first, before pouring them in the mixing bowl, to ensure there are no egg shells and the eggs are good quality.
  • Salt and pepper: Our seasoning ingredients. But keep in mind that the sausage and cheese are already salty, so only add salt as needed.

See recipe card for quantities.

🔀 Substitutions

Breakfast sausage: You can also use ham or bacon.

🌈 Variations / Options / Add-Ins

  • Veggies: Pack the nutrient content of your quiche by adding vegetables like spinach, spring onions, potatoes, broccoli, bell pepper.
  • Protein: For more protein options, you can also toss in mushrooms, tofu, chickpeas, bacon, or leftover cold cuts.
  • Sauces: Amp up the appearance and taste of your savory egg tart by drizzling your preferred sauce or condiments on top, like hollandaise sauce or sriracha.
  • Extra creamy: You can add a splash of heavy cream or half and half to make it extra rich and creamy.

👩‍🍳 Pro Tips

  • Make a batch of mini quiche for parties! To do this, you can use ramekins, mini tart shells, or silicon muffin liners. You can fit about four to six in the air fryer basket. This is also great for meal prep.
  • Line the air fryer basket with a liner or use parchment paper for less mess.
  • Don’t add watery ingredients; otherwise, your quiche might turn out to be—you guessed it—watery. If you’ll be adding blanched vegetables, make sure to drain off excess water well.
  • Don’t overfill the savory egg tarts. Otherwise, it might not be able to hold up its shape. Keep in mind that there must be just enough filling to egg mixture ratio so that it still holds its form.

❓ Recipe FAQs

Why is my quiche watery?

This problem happens if there is not enough egg to bind all the ingredients together or you might have used watery ingredients.

To save a soggy and watery quiche, you can try putting it in a skillet on the stove top and let the bottom crisp up for a few minutes. Keep an eye on it as it could easily turn from crisp to burnt.

Why is my quiche not done in the middle?

It might be undercooked or cooked at a low temperature. Simply put it back in the air fryer and let it cook for a few more minutes or until a fork inserted in the middle comes out clean. Do not be tempted to overcook it as it might turn tough and dry.

How to store and reheat this air fryer quiche with sausage?

If you have some leftover quiche, store it in an airtight container. In the fridge, it will stay good for up to 5 days; in the freezer, it can last for up to a month.

If the quiche is frozen, give it time to thaw at least an hour at room temperature or overnight in the fridge. To reheat, simply pop it in the microwave on high in 1-minute intervals until heated through. You can also put it in the air fryer for 3-5 minutes at 325 degrees F.
