Keto Parmesan Zucchini Chips

Keto Parmesan Zucchini Chips are a great snack or side dish for the low carb lifestyle. These delicious zucchini chips are also a great way to use up those excess zucchini from the garden during growing season!

ARE ZUCCHINI CHIPS KETO FRIENDLY?

People who live a keto lifestyle always want to know if a recipe is truly keto friendly. I am happy to say that these Keto Parmesan Zucchini Chips are very keto friendly.

A lot of snack bite recipes are breaded with ingredients that do not meet the keto guidelines. These zucchini bites are coated with pork rind crumbs instead of regular bread crumbs.

Pork rinds are a staple on the keto diet and can be crushed to use as breading. If you don’t want to hassle crushing the pork rinds yourself you can buy Pork Panko. This is pork rind breadcrumbs and is a great convenience item.

INGREDIENTS FOR KETO PARMESAN ZUCCHINI CHIPS

This easy recipe has some very basic ingredients that most keto eaters will have on hand.

HOW TO MAKE PARMESAN ZUCCHINI CHIPS

These sliced zucchini bites are simple to make, but do take a little bit of time to put together since you are breading each slice individually.

The taste makes the effort totally worth it though! I love good zucchini recipes!

STEP ONE: PREPARE ZUCCHINI

Start off by preheating the oven to 400 degrees F. Prepare a baking sheet by spraying with nonstick cooking spray and set aside.

Now take the zucchini and cut into 1/4 inch slices.

STEP TWO: PREPARE BREADING

If you are making your own pork rind crumbs go ahead and place 2 ounces of pork rinds into your food processor.

Process the pork rinds until you have fine crumbs. If you don’t have a food processor you can accomplish the same thing by putting the pork rinds into a Ziploc bag and crumb the rinds with a rolling pin.

When you have the pork rind crumbs place 1/2 cup of the crumbs into a small bowl.  Add in the Parmesan cheese, basil, thyme, salt and pepper and stir to combine.

STEP THREE:  COAT ZUCCHINI

Take another small bowl and beat the egg in the bowl.

Now make an assembly line to make the zucchini bites.

First dip a slice of zucchini into the egg.  Next dredge the slice of zucchini in the crumb mixture.

Place the coated zucchini slice on the baking sheet. Repeat this process for all of the zucchini slices.

STEP FOUR: BAKE

Place the baking sheet of coated zucchini slices into the oven and bake for 20-25 minutes. You want the zucchini to be softened and the outside coating to be crispy.

These are best served hot out of the oven!

Ingredients
  

  • 2 Medium sized zucchini
  • 1/2 cup Parmesan cheese
  • 1 Egg beaten
  • 1/2 cup Pork rind crumbs
  • 1 teaspoon Basil
  • 1 teaspoon Thyme
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees.
  • Cut the zucchini into ¼ inch thick slices.
  • Place about 2 ounces of pork rinds into a food processor, and process into crumbs. Alternatively, you can place the pork rinds into a Ziploc bag, and break into crumbs with a rolling pin.
  • Place ½ c of pork rind crumbs, the parmesan cheese, basil, thyme as as well as salt and pepper to taste in a bowl, and mix well.
  • Place one beaten egg in a separate bowl.
  • Dip the sliced zucchini into the egg, and then dredge in the crumb mixture before placing them onto a lined or well greased baking sheet.
  • Bake for 20-25 minutes until the zucchini is softened, and the coating is crispy.
