I decided to gather up as many Instant Pot Mexican recipes as I could find for Cinco de Mayo. Well, also because my family loves Mexican food and I love cooking in my electric pressure cooker.

When I say my family loves Mexican food, I actually mean almost any type of Central American food. Since Americans celebrate a Mexican holiday that most Mexicans don’t even celebrate, I was hoping I could get away with my broader interpretation of appropriate food for this celebration.

If you’re seeking authentic Mexican cuisine, you’ll probably only find a few recipes in the list below that fit the bill. However, if you love flavors like cumin, cilantro, chiles, and lime, you’ll find dozens in this collection.

  1. Thanks for collecting all of these recipes. I found several to try out on my lab rats, er, family, before Cinco de Mayo. And since Cinco de Mayo coincides with the Kentucky Derby this year, we’re calling it Derby de Mayo and serving Mojitos, because surely that anything with that much mint counts as a julep.
