Step 1: Prepare the cake mix
Prepare the chocolate cake mix according to package directions. Bake them in a paper lined muffin tin until done.
Step 2: Cool the cupcakes and wash the strawberries
As the chocolate cupcakes are cooling on a cooling rack, prepare the chocolate-covered strawberries. Wash, dry and remove the green stem from the strawberries.
Step 3: Prepare a baking sheet
Line a baking sheet with parchment paper and set aside.
Step 4: Melt the chocolate
Melt the milk chocolate chips in the microwave in 35 second increments, stir well in between each reheating.
Step 5: Dip the strawberries
Dip each strawberry in the melted chocolate chips, coating the strawberries completely. (A toothpick or dipping tool comes in handy for this.)
Step 6: Allow the chocolate to harden
Place the chocolate-coated strawberries on the prepared baking sheet and repeat the process with all strawberries. Allow the chocolate on the strawberries to set for at least 45 minutes.
Step 7: Cream the butter and sugar for the strawberry frosting
For the strawberry buttercream, beat the butter and powdered sugar in a large bowl with an electric mixer for 2 minutes on medium-high speed.
Step 8: Add the remaining wet ingredients
Add the milk and strawberry extract and beat until combined.
Step 9: Adjust the flavor of the frosting and then add to a piping bag
