Mix together your Panko crumbs and seasonings in a medium-size bowl.

Place your medallions into the egg wash and make sure they are fully coated on each side.

    I was hopeful but it just wasn’t good. I would recommend adding salt along with the garlic powder and Italian seasoning. Trying to flip the medallions was a nightmare. They were just a gooey mess. I put the slices that didn’t fit in my air fryer in the oven… even a bigger gooey mess! This recipe was not for me.

    • Thanks for sharing your ideas for additional ingredients to add. I’m sorry you had a bad experience with the recipe. It could be that the mozzarella log that you used was a little softer. Also, there are tips in the post about making sure to dab off any moisture from the mozzarella slices, and to fully coat them in the Panko and repeat this step a couple of times – did you follow those tips?
