What is a Cordon Bleu?
If you’re a fan of chicken and cheese, then you’ll definitely love Cordon Bleu. It’s a French term meaning “blue ribbon” or a high distinction often given to food prepared according to the highest standard of traditional French cooking.
It’s a dish made with meat wrapped around cheese, then coated with breading and either pan-fried or baked. When you cut into a cordon bleu, you’ll often find melted cheese oozing out of it!
Different types of meat can be used to create this dish. You can use pork, veal, or chicken fillet and pound it thinly before wrapping it around the cheese. You can add mushrooms, bacon, or ham alongside the cheese filling, or cook the meat without dipping it in the bread crumbs first. There are many ways to go about it – one of which I will share with you today!

- Black Forest Ham: Out of this type of ham? Don’t sweat it! You can use any type of ham you have, or even turkey, bacon, or prosciutto if that’s what you’ve got in your pantry right now.

🌈 Variations / Options / Add-Ins
You can also make some variations of this dish:
- Cook it in an Air-Fryer: No oven? No worries! You can cook chicken inside an air fryer. Set it to 350°F and then cook one side for about 8-10 minutes, then flip and cook for another 6 to 10 minutes. However, you may want to roll the meat with the cheese inside, and secure it with toothpicks to prevent most of the cheese from dripping down the fryer basket.
- Serve it with Sauce: This chicken dish will go well with a creamy sauce or even Hibachi Sauce, which is perfect for chicken and roasted vegetables.
- Give it some heat: If you’re a fan of spicy dishes, adding some cayenne pepper to the cream cheese and Dijon mustard can give this chicken recipe a nice spicy kick!
- Roll it: If you’re up for a challenge, give the traditional cordon bleu a try. Instead of simply stacking the ham and cheese on top of the chicken breasts, pound the meat thinly and roll it with the cheese and ham inside it.

👩🍳 Pro Tips
- You can dry brine the chicken to make it more flavorful. Season chicken with 1 teaspoon of coarse kosher salt for every pound of meat. Leave it in the fridge overnight; do not cover it. Do not exceed 24 hours of dry brining.
- Alternatively, you can also do wet brining if you’re in a hurry. Mix two quarts of water and 1/2 cup of kosher salt for 4 pounds of chicken meat. Put the chicken in the saltwater mixture and leave for 30 minutes per pound of chicken meat.
- Cooking time may vary depending on how thick your chicken breasts are. You can lengthen the cooking time if you’re dealing with very thick meat to ensure it’s cooked well.
❓ Recipe FAQs
You can use a digital thermometer to check if your chicken is cooked! Insert the thermometer in the thickest part of the chicken. If the internal temperature reads 165°F, then the chicken is done.
Alternatively, you can also cut into the chicken. If the juice coming out of it runs clear instead of reddish or pinkish, then that’s a sign that the chicken is no longer raw.
Put any leftovers inside an airtight container and store them in the refrigerator. It should be good for 3 to 4 days.
Pop any chicken leftovers inside the oven or a fryer, and then reheat until the chicken is warmed all the way through.
