Equipment

  • Oven
  • Casserole dish
  • Small bowl

Ingredients

  • 4 chicken breasts boneless, skinless
  • 8 slices Black Forest ham
  • 8 slices Swiss cheese cut in half
  • 2 tablespoons Dijon mustard
  • 2 ounces cream cheese
  • 1/3 cup pork rind crumbs
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  • Turn your oven to broil.
  • Place your chicken breasts in a casserole dish and drizzle both sides with olive oil.
  • Season the chicken (both sides) with salt and pepper to taste.
  • Place the baking dish under the broiler on high for about 10 minutes. Turn the chicken over and broil for another 10 minutes.
  • Make the sauce by mixing the cream cheese and Dijon Mustard in a bowl until smooth.
  • Carefully remove the dish from the oven. Put it on a table.
  • Place a slice of Swiss cheese on top of each chicken breast.
  • Add a slice of Black Forest ham to each chicken piece.
  • Spread some of the cream cheese and mustard mix over the ham.
  • Add the remaining slices of cheese on top of the sauce
  • Return the casserole to the oven and cook for 2 - 3 minutes.
  • Sprinkle pork rind crumbs over the chicken, then cook for another 2 - 3 minutes.
  • Once the chicken is completely cooked, serve each chicken breast on a plate, garnish with parsley, and enjoy!

Notes

  • You can dry brine the chicken to make it more flavorful. Season chicken with 1 teaspoon of coarse kosher salt for every pound of meat. Leave it in the fridge overnight; do not cover it. Do not exceed 24 hours of dry brining.
  • Alternatively, you can also do wet brining if you're in a hurry. Mix two quarts of water and 1/2 cup of kosher salt for 4 pounds of chicken meat. Put the chicken in the saltwater mixture and leave for 30 minutes per pound of chicken meat.
  • Cooking time may vary depending on how thick your chicken breasts are. You can lengthen the cooking time if you’re dealing with very thick meat to ensure it’s cooked well.
