Turn your oven to broil.
Place your chicken breasts in a casserole dish and drizzle both sides with olive oil.
Season the chicken (both sides) with salt and pepper to taste.
Place the baking dish under the broiler on high for about 10 minutes. Turn the chicken over and broil for another 10 minutes.
Make the sauce by mixing the cream cheese and Dijon Mustard in a bowl until smooth.
Carefully remove the dish from the oven. Put it on a table.
Place a slice of Swiss cheese on top of each chicken breast.
Add a slice of Black Forest ham to each chicken piece.
Spread some of the cream cheese and mustard mix over the ham.
Add the remaining slices of cheese on top of the sauce
Return the casserole to the oven and cook for 2 - 3 minutes.
Sprinkle pork rind crumbs over the chicken, then cook for another 2 - 3 minutes.
Once the chicken is completely cooked, serve each chicken breast on a plate, garnish with parsley, and enjoy!
