How to Make Instant Pot Beef Stroganoff

Creating this delicious and nostalgic family classic in the Instant pot is a great way to feed your entire family. Put together a few ingredients and voila, family dinner in an instant.

Ingredients Needed

  • 1 lb beef for stew
  • 1 package baby bella crimini mushrooms
  • 2 sprigs of thyme
  • 12 oz package wide egg noodles
  • 1 cup sour cream
  • 1 tablespoon corn starch
  • 2 teaspoon salt
  • 1 tablespoon minced garlic
  • 2 teaspoons pepper
  • 1 white onion; chopped
  • 1 tablespoon olive oil
  • 32 oz beef broth

The stewed beef and baby bella cremini mushrooms really enhance the flavors of this meal.

It is also suggested that you use broad egg noodles rather than the thin type. This will ensure they do not get gummy during the cooking process.

Step 1: Sauté Beef and Mushrooms

Turn the pot to sauté mode and add in the olive oil. Allow to come to heat and add in the beef searing the meat on each side. This usually takes about 2 minutes.

Add in your sliced baby bella cremini mushrooms, minced garlic and diced onion, sautéing for approximately 3 more minutes.

Step 2: Add Seasoning and Broth

Drop in two springs of thyme and add in the beef broth to cover the mixture. Season with salt and pepper.

Step 3: Pressure Cook

Place the lid on the instant pot and set the valve to seal. Set the instant pot to high pressure and cook for 20 minutes.

Once the time is up, perform a quick release.

Step 4: Cook Noodles

When the pressure has fully released, carefully remove the lid. Add in your egg noodles, ensuring they are covered by the liquid.

Place the lid on the instant pot and seal. Set to high pressure for 3 minutes and then quick release pressure once finished.

Step 5: Finish Sauce

Stir in one cup of sour cream, adding in a tablespoon of cornstarch mixed with water. Stir the mixture well until fully dissolved.

Place the Instant pot back on sauté mode for 2 minutes. This will allow the sauce to thicken quickly. Once thickened turn off the instant pot.

Serve garnished with pepper and parsley.

  • In the instant pot, add olive oil and stewed beef. Set the instant pot to saute mode and sear the meat by cooking for two minutes.
  • Add in sliced mushrooms, minced garlic, and diced onion. Saute for about 3 more minutes.
  • Drop in the two sprigs of thyme and pour beef broth over the mixture. Add in salt and pepper.
  • Place lid on the instant pot and set valve to seal. Set instant pot to high pressure for 20 minutes.
  • Once the instant pot is done counting quick release pressure. Add in egg noodles and make sure that they are cover with liquid.
  • Place the lid on the instant pot and set the valve to seal. Set instant pot to high pressure for 3 minutes. Once it’s done counting quick release pressure.
  • Stir in 1 cup sour cream and one tablespoon cornstarch mixed with water.
  • Stir until dissolve. Place on saute for mode for 2 minutes. The sauce will thicken fast. As soon as it does turn off the saute mode.
  • Serve topped with pepper and parsley.
