It’s not quite clear where Caesar salad comes from but one of the stories is that a French-inspired Italian-American chef Caesar Cardini invented the salad in Mexico in 1924 at his restaurant in Tijuana.
The story is that on the 4th of July weekend Caesar didn’t have enough ingredients/food for all of the customers so he threw together what was left in the kitchen. He had lettuce, olive oil, dried bread, raw egg, parmesan cheese and Worcestershire sauce, which thrown together, became a Caesar salad.
This salad recipe now has so many different variations, including this version of Caesar chicken salad sandwiches. However, all of the versions are just like the original one—they’re all made by throwing together whatever ingredients you have on hand—just like a mom would do.

- Mediterranean: Keep the chicken, dressing and cheese the same, but reduce the mayo to 1/2 cup and replace the shallot with 1/4 cup diced red onion. Then, add 1/4 cup diced sun-dried tomatoes, 1/4 cup chopped Kalamata olives, and a handful of fresh basil leaves.
- Avocado: The only thing you need to change is reduce the mayo to 1/2 cup. Then, add 1 ripe avocado, mashed, and 1 tablespoon fresh lemon juice.

- Mixing bowl: You’ll need a mixing bowl to mix all of the ingredients together. These bowls are nice because the bottoms are non-slip.

🔪 How to Make Caesar Chicken Salad Sandwiches
Aside from the awesome taste, another great thing about these Caesar Chicken Salad Sandwiches is that they are so incredibly easy to make. Just 5 ingredients and very little effort, then lunch is ready.
Step 1: Make the Sauce
Simply mix the mayonnaise and Caesar dressing together in a large mixing bowl.
Step 2: Add Remaining Ingredients
Next, add the chicken to the sauce and stir until it’s combined well. Then, add the shallots and cheese.
Mix well. Then transfer to a storage container and cover (or simply cover the mixing bowl with plastic wrap).
Step 3: Refrigerate
Though you can eat the Caesar chicken salad right away, it tastes so much better if you let the flavors combine for a little while. I like to make it the night before for sandwiches the next day, but if I’m making it the same day I aim for a minimum of 30 minutes in the refrigerator.

- 3 cups shredded chicken rotisserie chicken works great
- 3/4 cup mayonnaise
