Pie Crust Directions
Step 1: Mix flour and salt
In a food processor set up with the regular blade, place the flour and salt in and pulse 3 times to mix.
Step 2: Add the butter and mix until crumbly
Add the butter and process until the flour is crumbly.
Step 3: Add vinegar and lemon zest to the crust
Add in the vinegar and the lemon zest.
Step 4: Add water one tablespoon at a time
Once the mixture is combined into coarse crumbs, start adding the water 1 tablespoon at a time. Once the dough comes together, stop processing it.
Step 5: Chill the pie crust
Turn the dough out onto the counter and form it into 2 discs. Wrap them and refrigerate for at least 1 hour.
Step 6: Use according to recipe directions
After the hour, use according to the pie recipe directions.
How to Make Fresh Blueberry Pie
Making this Fresh Blueberry Pie is simple, though it does take quite a few steps. Just follow the instructions below and you will have a delicious blueberry pie in no time at all.
Step 1: Preheat the oven
Preheat the oven to 425 degrees f.
Step 2: Roll out one of the pie crusts and line a pie plate
Roll out one part of the pie shell and line a 9-inch pie plate and set aside.

Step 3: Combine blueberries and dry ingredients
In a large bowl, stir the berries, sugar, cornstarch, salt, zest, and lemon juice. Toss to coat.

Step 4: Pour pie filling into the pie plate
Pour filling into the prepared pie plate.

Step 5: Roll out the second crust and cut it into strips
Roll out the second piece of crust and then using a pizza cutter, cut strips of crust to form a lattice-style top for the pie.

Step 6: Start the top crust of the pie
Place one strip through the middle of the pie and then arrange the other strips in a row from the middle.

Step 7: Weave the pie crust to make a lattice
Fold the strips in half and begin weaving strips of pie crust in the opposite direction.

Step 8: Cut the extra crust off and crimp the crust
Once the strips are arranged in a lattice or basket weave design, cut the longer pieces off and crimp the strips to the bottom crust to keep everything together.

Step 9: Brush the pie with egg wash and top with sanding sugar
With a basting brush, brush the egg wash onto the crust and sprinkle the top with Sanding Sugar.

Step 10: Bake the pie
Place the pie into the 425-degree oven for 15 minutes.
Step 11: Lower the temperature of the oven and continue baking
Lower the temperature to 375 degrees and continue baking for 30 minutes.
Step 12: Check the crust for browning
After 30 minutes, check the pie and make sure the crust isnโt getting too dark. If it is, tenting with aluminum foil will stop the crust from burning.
Step 13: Allow the pie to cool
Once the pie is finished baking, this is the hard partโlet it cool for at least 2-3 hours. If itโs cut into too soon it will be too loose. By letting it sit, the cornstarch has time to work its magic!
