Ingredients

To make this air fryer panko shrimp you need a handful of ingredients. You should have most of these ingredients on hand already, so you might even be able to avoid a trip to the grocery store.

  • shrimp, peeled to the tail, raw
  • eggs
  • flour
  • cornstarch
  • panko
  • sweetened shredded coconut

Sauce:

  • sugar
  • ketchup
  • white vinegar
  • water
  • sweetened shredded coconut
  • chili oil, optional for heat

Substitutions

Shrimp: Frozen shrimp can be used if they are thawed and drained first.

Coconut: Unsweetened coconut is a great swap for sweetened coconut in this recipe.

How to Make Air Fryer Coconut Shrimp

This easy homemade coconut shrimp recipe only takes four steps and you will be eating delicious coconut breaded shrimp.

Step 1: Make the sauce

In a saucepan over medium-high heat, combine all the sauce ingredients and bring to a boil. Once boiling, cut the heat and let it sit.

Step 2: Prepare the dredge for the shrimp

In 3 bowls, whisk the eggs, mix the flour and cornstarch, and mix the coconut and panko.

In three separate bowls are cleaned shrimp, flour and cornstarch mixture, whisked eggs.

Step 3: Bread the shrimp

Dip the shrimp in the flour and cornstarch bowl, then in the egg wash bowl, and then finally in the panko coconut bowl.

Step 4: Air Fryer the shrimp

Place battered shrimp in air fryer basket and spray with oil. Cook on 390 for 7 minutes.

  • 1 lb shrimp peeled to the tail, raw
  • 2 eggs
  • 1/4 cup flour
