I first made this no churn pistachio ice cream recipe when I was looking for fun recipe ideas to serve my family on St. Patrick’s Day. This was perfect! My whole family loved this unique treat. 

I am a hundred percent obsessed! I can’t wait to make more ice cream flavors. But first— this super creamy and nutty pistachio ice cream recipe.

Ingredients

This homemade pistachio ice cream without eggs only requires 4 simple ingredients (maybe 3 if you skip the condensed milk).

  • heavy whipping cream (35%) 
  • sweetened condensed milk, to taste (optional) 
  • pistachio pudding mix  
  • crushed pistachios

Substitutions

Pistachio pudding mix: Sometimes, I like to make my own pistachio nut butter if I want my easy pistachio ice cream recipe to be more authentic. To do this, simply put your pistachio nuts into a food processor and blend them until it forms a smooth paste. 

Whipping cream: If you want a dairy-free substitute for this, you can use coconut whipped cream. It will leave a slightly tropical taste, but it will still taste wonderful, nonetheless. 

Condensed milk: The condensed milk is used to add sweetness to the ice cream. However, you can add sweetness by using other ingredients like confectioner’s sugar. Put the confectioner’s sugar into the whipping cream while mixing it, and that should do the job.

How To Make Pistachio Ice Cream Recipe Without An Ice Cream Maker

This recipe is made easier for you; no special appliances and ingredients are needed. Just a couple of minutes of your time and tah-dah! You now have the best pistachio ice cream that your whole family can enjoy.

Step 1

Start by placing the heavy whipping cream in a large mixing bowl. Using your electric mixer, beat the whipping cream for about 4-6 minutes or until stiff peaks form.

Step 2

If you want to add sweetness to your ice cream, gently stir the sweetened condensed milk into the whipping cream.  This step is entirely optional, but I strongly suggest doing it, especially if you’re a sweet tooth like me. 

Step 3

Next, gently stir in the pistachio pudding mix until no dry patches remain, being careful not to overmix. Mix thoroughly to ensure that all the ingredients are fully incorporated to achieve the best flavor.

Step 4

Then, stir in the crushed pistachios to add more flavor and texture to your ice cream. Mix everything thoroughly so that the pistachio nuts are evenly distributed throughout the ice cream. Once you’re done mixing, fold the mixture into a clean loaf pan using a silicone spatula and spread it evenly.

Step 5

Finally, pop the ice cream in the freezer and freeze it for 3 hours or overnight to let it set. Just like that, you can scoop away! Enjoy.

Variations

Dairy-free: To make this recipe dairy-free, substitute condensed milk and whipping cream with cream of coconut and coconut whipped cream, respectively. Of course, your ice cream will taste a little differently, but I’m sure the hint of coconut will complement the pistachio flavor well. 

Sugar-free: Not only does the sweetened condensed milk add sweetness to your ice cream, but it also adds creaminess to it. To keep your ice cream less sweet (sugar-free) and airy, skip the condensed milk. 

Alcohol-infused: We, adults, always love to make things a little more exciting. That is why I found a way to spike this delicious homemade pistachio ice cream recipe with a bit of alcohol. I simply add a bit of vodka to the mixture to make this recipe more fun.

Some people like their pistachio nut ice cream plain and simple, and some people want a bit more extra. Whichever category you fall into, I’m sure these toppings will go well with your pistachio ice cream:

Tips

  • If you want a greener color, you can put a few drops of green food coloring in your whipping cream.
  • To speed up the process of making the whipping cream, you can pop your mixing bowl in the freezer for a couple of minutes before making the whipping cream. 
  • To make your pistachio ice cream dessert more aesthetically pleasing, you can add green swirls by putting green food coloring and swirling it with a knife. It’s fun and beautiful to look at.

What does no-churn mean?

No-churn means you don’t need to use an ice cream maker to make this recipe. You only need a mixer, and you’re all set. 

How to store leftover pistachio ice cream?

I like to cover my loaf pan with either saran wrap or aluminum foil when storing my pistachio nut ice cream and then just pop it back in the freezer. You may also opt to put your ice cream in a freezer-safe container instead of a loaf pan so that it’s easier to store it. 

Can I make this recipe in a different appliance?

The only appliance you need to make this recipe is an electric mixer. It’s a lot easier than using an ice cream maker. However, if you like to use an ice cream maker, go ahead and do so.

    I used country crock plant based heavy cream since I’ve used this to make many pies and cakes w zero taste difference. I also used a can of condensed coconut milk as we are a dairy free home and this turned out delicious
