Bell Peppers: The red and yellow bell peppers add great color and flavor, but you can use any combination of bell peppers you want.
Tortillas: I love flour tortillas but corn tortillas are great as well.
Fajita Seasoning: We eat a lot of Mexican food so I always have all the spices on hand to make the homemade fajita seasoning, but you can also use a store-bought mix if you prefer.

Toppings
These shrimp fajitas are full of flavor as is, but if you want to add even more flavor and texture, you can add some of these toppings:
- Salsa
- Shredded cheese
- Guacamole
- Sour cream
- Sliced jalapenos (pickled or fresh)
Tips
- Don’t overcook the shrimp in the oven or they’ll be hard and rubbery.
- If you don’t want to make your own seasoning, you can easily use a premade fajita seasoning in its place.
FAQs
The easiest way to store leftover shrimp is to keep it in a container in the fridge. Add on a lid and it should be fine for up to 2-3 days.
Low and slow is your answer. If you reheat shrimp too fast or too long, you’re going to overcook it and cause it to shrivel up.
Yes, you can. However, eating this fresh and then eating it again as leftovers will have a better taste and outcome.
