Refreshing And Flavorful Easy Pineapple Salsa

This easy pineapple salsa only takes a few minutes to throw together. It’s a refreshing, flavorful snack or appetizer that’s a pleasant variation of traditional chips and salsa.

This pineapple salsa is one of my favorite snacks. It’s a marriage of the tropical flavors I love with my favorite Mexican ingredients, just like this Coconut Lime Margarita.

It’s colorful, flavorful, and a blend of different textures. Basically, it’s a food fiesta you can enjoy in bite-sized portions.

Where I Save Time and Effort in This Recipe

For this recipe, I wanted something that was really quick and easy to put together. For that reason, even though I tried to stick with fresh ingredients, I did take a couple of shortcuts.

First, because I somehow manage to hurt myself every time I attempt to cut up a pineapple, I skipped the fresh pineapple. I’m sure this pineapple salsa would be even better with fresh pineapple, so if you’re up for it, go for it. However, I wrote the recipe true to how my lazy self makes it – with canned pineapple tidbits.

Second, because I love black beans for their nutritional value and especially in Mexican dishes, you’ll find them in this recipe. Even though I can make black beans from scratch in my Instant Pot pretty easily, I went with canned black beans in this one in the interest of speed.

Other Ingredients in Easy Pineapple Salsa

Since most of the other ingredients are easy to dice, I used fresh ingredients for everything else.

I also tried to use a variety of colors so the end result would be pretty. Pretty food tastes better, right?

I like a little kick in my salsa, even if it’s pineapple salsa, so I did add some diced jalapeno. There are plenty of other flavors so the salsa isn’t overly spicy, but feel free to omit or use less if you don’t want any heat. Or, go wild and add extra if you really want a fiery salsa, and you can serve it with this refreshing Pineapple Mint Mojito to cool your mouth down.

Basically, you just add all the ingredients to a bowl and mix well. The end result is a colorful bowl of juicy goodness!

Easy Pineapple Salsa

Ingredients
  

  • 15 oz can beans drained and rinsed
  • 1 1/2 cups tidbits with juice
  • 1 tablespoons diced green onions
  • 1/2 small diced red onion
  • 1 diced red bell pepper seeds removed
  • 1 diced jalapeño
  • 2 tablespoons cilantro leaves chopped
  • 4 tablespoons lime juice
  • 1 tablespoons olive oil
  • Salt and pepper

Instructions
 

  • Wash and dice your veggies and place them in a large bowl.
  • Mix In your black beans, pineapple tidbits, olive oil and lime juice and toss with your veggies.
  • Season with salt and pepper and serve with tortilla chips.
