Why We Love This Recipe

Two things can make every summer perfect: a nice sip of margarita or tequila and an easy-to-make cake. What more could you want when you combine these two and make the ultimate strawberry margarita cake? Everyone will go nuts!

This is a very easy cake to do that will surely make all your events extra special. Everyone will gladly indulge in this sweet-but-a-little-boozed-up cake. It’s just like eating a regular strawberry poke cake, but with the extra kick of alcohol for more fun!

Ingredients

Here are a few ingredients to add to your grocery list. All of these are very easy to find:

  • 1 strawberry cake mix
  • 1 (3.5 ounces) box vanilla pudding
  • 1 cup almond milk
  • 1 cup Ready to Jose Cuervo Drink Strawberry Lime Margarita, divided
  • 8-ounce tub whipped topping, thawed
  • 16 ounces strawberries, chopped
  • 1 tablespoon lime zest
  • Lime slices and strawberry slices to garnish

Substitutions

Almond milk: A lot of people prefer using whole milk because it is tastier. But because not everyone can consume dairy milk, they opt for healthier dairy-free milk. Another common substitution for this is soy milk.

Lime zest: People usually have lemons in their fridge more than they have lime. Lemon zest is an excellent substitute for lime zest also.

Vanilla pudding: If you run out of vanilla pudding, don’t rush to the grocery store just yet. To substitute vanilla pudding, all you need to do is mix 1 part cornstarch to 2 parts sugar and add a bit of vanilla flavoring/essence!

How To Make Strawberry Margarita Poke Cake

This recipe for margarita cake is a simple yet effective way to spice up your parties. Or just chill and relax at home!

Step 1

Preheat the oven to 350 degrees. Grab a mixing bowl and prepare the strawberry cake mix as directed on the package.

Get a 9×13 inch baking pan and spray the bottom of the pan with nonstick spray. Bake according to package instructions. When it’s done baking, take it out of the oven and allow it to partially cool on a wire rack.

Step  2

Once the cake has partially cooled, poke holes throughout the cake. Instead of using a wooden spoon handle, use a fork or wooden skewers instead. The holes should be visibly smaller in this recipe compared to other poke cakes. The holes you make are made just so the strawberry margarita mix can easily soak in between the cake.

Step  3

Divide the 1 cup of strawberry margarita drink into two separate glasses. For the first half of your Jose Cuervo Drink Strawberry Lime Margarita, pour it evenly all over the holes in the cake. Make sure every inch of the cake gets soaked with the drink.

Step  4

Grab a different bowl and mix vanilla pudding mix with almond milk and the remaining half portion of your Jose Cuervo Strawberry Lime Margarita. Carefully fold this in the whipped topping with strawberries and lime zest.

When everything is well combined, spread the frosting evenly on top of the cake.

Step  5

Wash your strawberries and limes thoroughly and cut them horizontally about ⅛ inch. For that extra flavor and design, finish by garnishing the cake with thin slices of limes and strawberries. Decorate the cake however you want.

Step  6

Refrigerate for at least an hour before serving to let everything set and cool.

Variations

Variation 1: If you want to have a more strawberry flavor, you can drizzle some strawberry syrup on top of your cake.

Variation 2: If you are not a big fan of pudding, you can use plain yogurt or sour cream and add a bit of vanilla flavoring instead.

Variation 3: Another way to make this Strawberry margarita poke cake is by using a chocolate cake mix instead of a strawberry one to create a totally different yet equally delicious cake.
