You only need a few simple ingredients to help you make this tasty side dish recipe. All of these ingredients are easy to find at your local grocery store, or you may already have most of these ingredients on hand in your pantry. 

  • russet potatoes  – Russet potatoes really work best for air frying 
  • olive oil – I like to use high-quality olive oil for the best flavor 
  • parmesan cheese – finely grated parmesan cheese will work best for these diced potatoes

Substitutions

Potatoes: While russet potatoes really work best for this recipe, you could also use red potatoes or Yukon gold potatoes. 

Oil: I used olive oil, but you can use any high-temperature oil like canola oil or avocado oil instead.

Here are a few different ways that you can add more flavor to this simple side dish recipe. 

Herbs: Add some herbs such as thyme or rosemary to diced potatoes for a more flavorful dish.

How to Make Air Fryer Diced Potatoes

Making these air fryer cubed potatoes is so simple. Just follow the instructions below and you will have a family-friendly side dish in no time at all. 

Step 1: Whisk together the seasonings and wet ingredients for the potatoes

In a large mixing bowl, whisk olive oil, melted butter, salt, pepper, garlic, and parmesan cheese together.

Step 2: Toss the potatoes in the oil mixture until fully coated

Add cubed potatoes and mix until they are evenly coated.

  • Be sure to wash your potatoes well before you dice them.
  • There is no need to peel your potatoes first unless you just really want to peel them. 
  • If you want really crispy potatoes, you will need to cook them in a single layer in your air fryer basket. 
  • I recommend giving the air fryer basket a shake every five minutes or so while they are cooking. 
  • If the potatoes are cut into larger cubes then you will need to increase the cooking time by a few minutes. 
  • When the potatoes are done, the inside of them will be soft and tender. 
  • If you don’t have minced garlic, you can use a teaspoon of garlic powder instead.
