I’m a fan of celebrating all types of holidays, but St. Patrick’s Day just happens to be at the top of my list. I’ll never let go of trying to find the “gold at the end of the rainbow” and until I do, I’ll just keep filling my belly with fun Green Velvet St. Patrick’s Day cupcakes like these.

Because when you can’t have gold, desserts are the next best thing, right? These Irish Oatmeal Cookies are a great dessert choice.

This simple dessert is fast, easy, and individually perfect. There’s just something special about having a whole cupcake all to yourself without having to share!

Ingredients / Shopping List

  • 1 ¼ cups of all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon high-quality cocoa powder
  • ¾ cup granulated sugar
  • ¾ cup vegetable oil
  • ½ cup milk
  • 1 egg, room temperature
  • 1 teaspoon white vinegar
  • ½ teaspoon green gel food coloring
  • 1 stick (1/2 cup) unsalted butter, softened
  • 2 cups confectioners’ sugar
  • 1-2 tablespoon milk
  • 3-4 ounces green rolling fondant
  • ¼ cup golden and white pearl sprinkles

Substitutions and Additions

Shamrock Sprinkles: Any type of sprinkles are great but you can have fun with the choices!

Green Frosting: If you’re not a fan of using fondant, you can swap out and just use icing as well to create shamrocks on top of the cupcakes.

How to Make Green Velvet Cupcakes

Just a few simple steps are all you’ll have to do to create these amazing homemade green cupcakes!

Step 1

Start by preheating the oven to 350 degrees and line your cupcake pan with cupcake liners.

Step 2

Sift the flour, baking soda, salt and cocoa powder in a bowl.

In a separate bowl, cream together sugar and oil. Once that is done, go ahead and add the milk and egg and stir.

Next, you’re going to want to add in the white vinegar and mix. Once that is mixed well, you’re going to slowly add the dry ingredients into the wet ingredients. This will form the batter.

It’s then time to put in the gel food coloring. Mix thoroughly to color.

Step 5

Add the batter to the cupcake liners, about 2/3 full.

Step 6

Pop in the oven and bake for 20-22 minutes. Once done let your cupcakes cool before decorating.

Step 7

Making the frosting is simple. Put all the frosting ingredients into a bowl and mix on low. Increase to high speed until combined well.

Step 8

Put into a piping bag to frost each cupcake. I used a Wilson tip #2 but you can use what you have.

Take the green fondant and shape into clovers. The easiest way to do this is to make 6 spheres and 1/2 inch thick.

Step 10

Press two of the spheres together, making a point on one end. Do this same process for the other spheres.

Put the hearts together, with one being in the middle and the other two on the side, angled.

Press the three fondant hearts together, with one in the center and the other two on the side, slightly angled. Repeat this process for all the cupcakes.

Step 12

Put a clover on each one of the cupcakes and top with sprinkles. Enjoy!

Variations / Options / Add-Ins

Mix in the sprinkles: Another fun option is to add some sprinkles directly into the batter. This can be a super fun way to add some texture and color!

  • Don’t overbake your cupcakes. This will dry them out and make them crumbly.
  • Make certain that you don’t overmix the cupcake batter. Just mix until it’s combined, nothing more.
