Air frying gnocchi turns those pillowy potato dumplings into crispy, golden bites without any boiling. This makes a quick weeknight side dish or party appetizer that’s ready in 15 minutes with just three ingredients. The outside gets crunchy while the inside stays tender.

Quick Highlights
- Ready in 15 minutes - faster than boiling water
- Works as a side dish or appetizer
- Crispy outside, fluffy inside
Getting the Best Gnocchi & Seasonings
What kind of gnocchi works best? Shelf-stable gnocchi from the pasta aisle crisps up perfectly. Frozen gnocchi works too-just add 2-3 extra minutes to the cook time without thawing first.
Can I use a different seasoning? Italian seasoning, Parmesan cheese, or even taco seasoning all work great. Garlic salt is simple and flavorful, but swap based on what you’re serving it with.
The Secret to Maximum Crispiness
Oil coverage is key: Make sure every piece of gnocchi has a light coating of oil. This is what creates the crispy exterior. If some pieces look dry, add a little more oil.
Don’t skip stirring: Halfway through cooking, shake or stir the basket so all sides get crispy instead of just the bottom.
Check for doneness: They’re ready when golden
Mix It Up: Flavor Variations
- Cauliflower gnocchi: Works great, may need 12-14 minutes total
- Spicy version: Toss with red pepper flakes or buffalo sauce after cooking
- Italian style: Add Italian seasoning and extra Parmesan before air frying
- Pesto gnocchi: Toss with pesto and cherry tomatoes after cooking for a full meal
- Salad topper: Use as crunchy croutons on Caesar or arugula salads
Make-Ahead & Storage Tips
Storage
Fridge: 3-4 days in an airtight container
Reheating
Air fryer at 350°F for 3-5 minutes to crisp them back up. Skip the microwave-it makes them soggy.
Make-Ahead Notes
Best served fresh, but you can prep by tossing gnocchi with oil and seasonings up to 2 hours ahead. Keep refrigerated, then air fry when ready to serve.
