Healthy Breakfast Cookie Recipes

In my effort to improve my health, I recently adopted an anti-inflammation diet which has me limiting my consumption of gluten, dairy, sugar, and red meat. This can be a challenge at meal time, but breakfast has proven especially difficult.

If I adhere strictly to my diet guidelines, I’m left with plain oats with berries or a smoothie or juice blend. To find some other options, I’ve been searching for other healthy breakfast options. Last week I shared my favorite healthy breakfast muffin recipes I’ve found.

Today, I’m sharing the best healthy breakfast cookie recipes. I was so excited to find these recipes since: 1) My kids were just as excited to try them and 2) these make great snacks to take with you to help avoid choosing a candy bar or empty-calorie dessert.

Sugar-Free, Gluten-Free, AND Dairy-Free

Since I’m currently trying to avoid sugar, gluten, and dairy, my search started there. I was thrilled to find so many options!

These Three Ingredient Breakfast Cookies from Pint-Sized Treasures prove that sometimes simple is best. Using ingredients I always have in my kitchen, these cookies are sure to become a staple in my house.

    What a novelty to have cookies for breakfast – it would be fun especially on April 1st and turn it all into a backwards day 😉
