This Whipped Pina Colada Recipe with Coconut Milk is sweet, creamy, and bursting with coconut flavor. It's the perfect cocktail to make on a warm summer day.
Add 1/4 cup of pineapple juice and the heavy whipping cream to a medium bowl and beat with a hand mixer until soft peaks form. This should take about 4-5 minutes. Set aside.
Add the coconut cream, coconut milk, pineapple juice, sugar and ice to a large blender.
Blend until the ice is crushed and ingredients are combined.
Pour into serving glasses and top with rum.
Top with a dollop of pineapple whipped cream if desired.
Notes
The whipped cream steps are optional. If you don't want to serve your pina coladas with the whipped cream you can skip these steps.
I prefer to use full-fat coconut milk for the best flavor, however you can use a lower fat version instead.
If you want to make a virgin pina colada just leave out the rum.
