Rolo Pretzel Bites for Mardi Gras

Ingredients

  • 35 small pretzel twists
  • 8 ounce package Rolo Caramel Candies unwrapped
  • 35 pecan halves lightly toasted and salted
  • 1 bag yellow candy melts
  • 1 bag purple candy melts
  • 1 bag green candy melts
  • yellow, green, and purple sprinkles

Instructions

  • Preheat oven to 350 F. Line a baking sheet with parchment paper. 
  • Place pretzels in a single layer on the parchment paper on the baking sheet. On top of each pretzel, place a Rolo candy (unwrap them first if needed).
    35 small pretzel twists, 8 ounce package Rolo Caramel Candies
  • Bake for 3 to 5 minutes or until candies are soft but not melted. Remove from oven.
  • Immediately press one pecan half down on top of each Rolo candy, pressing the candy through the pretzel.

  • Allow the pretzel turtles to cool for at least 30 minutes at room temperature, or until the chocolate and caramel have fully set. If you want to speed up the process, you can place them in the refrigerator for about 10–15 minutes until firm.
  • Melt candy coating in individual bowls according to package directions. One color at a time, drizzle candy coating over pretzel turtles. Immediately add sprinkles.

  • Let the decorated pretzel turtles set for about 30 minutes at room temperature or 10–15 minutes in the refrigerator until the candy melts harden completely. This will ensure they don’t smudge when stored or served.
  • Put the treats on a nice serving plate and enjoy them with your friends and family.

Pro Tips

  • Overbaking can cause the caramel filling to melt and run off the pretzel so watch them closely. Start checking them at 3-4 minutes. 
  • Press the pecans down gently — If you press too hard, the caramel might ooze out too much.
  • Microwave the candy melts in 15-20 second intervals, stirring between each, to prevent burning.
  • Use a piping bag or ziplock bag for drizzling — Snip a tiny corner off the bag for clean, even lines. 
  • If the drizzle clumps, a toothpick can smooth or separate colors.

Yes, you can freeze these pretzel turtles up to 2 months. Place bites in a single layer on a baking sheet and freeze for 1 hour, and then transfer them to a freezer-safe container with parchment between they layers.
Allow them to thaw at room temperature for 15-20 minutes before serving. 
 
My candy melts are too thick—how do I fix it?
If your melted candy is clumpy or too thick, stir in ½ teaspoon of vegetable oil or coconut oil at a time until it’s smooth.
