This chocolate protein chia pudding is easy to make and packed full of nutrients and protein. This is a keto-approved recipe too.

  • ¾ cup Ground chia seeds
  • 2 ¼ cups Unsweetened vanilla almond milk
  • 1 scoop low-carb chocolate protein powder
  • 4 tbsp. Unsweetened cocoa powder
  • 1 tsp. Vanilla extract
  • Pinch salt
  • ¼ cup Erythritol
  1. Heat the unsweetened vanilla almond milk in a small saucepan over medium heat.
  2. Once hot, dissolve ¼ cup of erythritol into the milk. Once dissolved, remove the saucepan from the burner and set aside to cool.
  3. When the milk mixture has cooled slightly, pour it into a mixing bowl.
  4. Add ¾ cup of ground chia seeds to the mixing bowl. You want the chia seeds to be ground as fine as possible, we used a coffee grinder to get the right consistency.
  5. Pour in 4 tbsp of unsweetened cocoa powder
  6. Mix in 1 scoop of low carb chocolate protein powder.
  7. Add 1 tsp of vanilla extract.
  8. Whisk all of the ingredients together until they are combined well, and the chia seeds begin to expand and form a pudding texture.
  9. Place in the fridge for several hours, and serve cold with freshly chopped walnuts, dark chocolate shavings, or other keto approved toppings.
