Pudding Mix Gingerbread Cookies

A soft and delicious ginger cookie that doesn't require molasses.

Ingredients

  • 3/4 c butter softened
  • 1/2 c brown sugar
  • 1 large egg
  • 1 T orange juice
  • 1 3.5 oz pkg butterscotch cook and serve pudding mix
  • 1 3/4 c all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt

Instructions

  • In a large bowl, cream butter and sugar until light and fluffy. Add egg and orange juice and mix well.
  • In a separate bowl, combine the remaining ingredients.
  • Gradually add dry ingredients to the creamed mixture and mix well.
  • Drop by rounded spoonfuls 2 inches apart on an ungreased baking sheet.
  • Bake at 350° for 10-12 minutes.
  • Remove to wire racks and allow to cool completely.
