Pudding Mix Gingerbread Cookies
A soft and delicious ginger cookie that doesn't require molasses.

- 3/4 c butter softened
- 1/2 c brown sugar
- 1 large egg
- 1 T orange juice
- 1 3.5 oz pkg butterscotch cook and serve pudding mix
- 1 3/4 c all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
In a large bowl, cream butter and sugar until light and fluffy. Add egg and orange juice and mix well.
In a separate bowl, combine the remaining ingredients.
Gradually add dry ingredients to the creamed mixture and mix well.
Drop by rounded spoonfuls 2 inches apart on an ungreased baking sheet.
Bake at 350° for 10-12 minutes.
Remove to wire racks and allow to cool completely.
