The Best Greek Salad
This really is the BEST Greek salad!

- 2 romaine hearts
- 1 5 oz. container baby spring mix
- 1 small red onion
- 1 cup sliced pepperoncini & ¼ cup brine
- ½ cup mixed fresh herbs dill, oregano, thyme, basil
- 1 pint cherry tomatoes
- 2 large cucumbers
- 1 cup feta crumbled
- 1-2 cups chicken cooked and cubed
- 1 garlic clove minced
- 2 tbs red wine vinegar
- ⅓ cup olive oil safflower oil or canola oil will work too
- salt and pepper
Rinse, and spin the romaine and baby spring mix dry in salad spinner. Move the greens to a large mixing bowl.
Combine the brine from the pepperoncini, red wine vinegar, S+P, and oil in a small bowl. Set aside.
Thinly slice the onion, and cucumber. Add the cucumber, onion, pepperoncini, herbs, tomatoes, feta, and dressing to the bowl with the greens. Toss to evenly distribute all of the ingredients.
