Banana Bread Pudding

Equipment

  • 9x13 casserole dish
  • Large bowl
  • Aluminum foil
  • Whisk

Ingredients

  • ¼ cup Melted Butter
  • ¼ cup Brown Sugar
  • 1 cup Milk
  • 1 cup Heavy Whipping Cream 35%
  • 3 Eggs
  • 1 Tablespoon Cinnamon
  • ½ teaspoon Salt
  • 4 cups Chopped Bread Cubes approximately 16oz
  • 3 Overripe Bananas sliced (approximately 1 cup)

Optional Glaze

  • 1 cup Powdered Icing Sugar
  • 1-2 Tablespoons Milk as needed
  • 1 teaspoon Vanilla Extract

Instructions

  • Preheat the oven to 375F.
  • Grease a 9"x13" casserole dish and set it aside.
  • Beat together the melted butter and brown sugar until well-combined.
  • Beat in the milk, heavy whipping cream, eggs, cinnamon, and salt until well-combined.
  • Place your bread cubes in the baking dish.
  • Top the bread cubes with banana slices.
  • Pour the mixture into the prepared pan. Then toss to coat the bread and banana slices.
  • Cover the casserole dish with tinfoil and bake for 20 minutes. Remove the tinfoil and continue baking for 20-30 more minutes until an inserted toothpick comes out clean.
  • Allow bread pudding to cool slightly before preparing the optional vanilla glaze.
  • Whisk together all glaze ingredients and pour evenly over the banana bread pudding.
  • Allow glaze to set for at least an hour before cutting and serving.

Notes

  • If you want an extra moist quick bread, add an additional banana.
  • For a more pronounced banana flavor, use all overripe bananas.
  • I recommend that you spray your casserole dish well so that clean-up is easy. 
  • Another way to top this brunch recipe is to drizzle the top with caramel sauce, or chocolate syrup. 
  • I've found that white bread, sourdough bread, brioche, challah, or french bread work best for this recipe. 
  • You can also add more flavor to this pudding by adding a teaspoon of vanilla extract or ground nutmeg.
