- 1 pound baby golden potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 2 tablespoons butter
Wash and scrub the potatoes thoroughly to remove any dirt and debris from the skin.
Make perpendicular slices along the potatoes, cutting just 3/4 of the way deep into the vegetable.
Toss the potatoes in olive oil and place them in a single layer in the air fryer. Season the potatoes with salt, pepper, and garlic powder.
Cook at 400°F for 10 minutes. The slices in the potatoes will slightly open after the initial cooking time.
While the potatoes are cooking, melt the butter in the microwave.
After 10 minutes, brush the potatoes with a generous amount of melted butter.
Cook the potatoes for another 5-8 minutes. Once fully cooked, the potatoes should appear golden brown, crispy on the outside, and fork-tender.
Transfer the potatoes to a plate. Enjoy and serve as a bite-size appetizer or side dish.
- Excess moisture on the potatoes’ skin can prevent crispiness, so don’t forget to pat them dry with paper towels after washing.
- Don’t overcrowd the air fryer basket to ensure even cooking.
