Ingredients

  • 1 ½ tablespoons unflavored gelatin
  • 2 tablespoons water
  • 1 ½ tablespoons white sugar optional
  • ½ cup coconut milk or whole milk
  • 3 cups fresh strawberries about 12 ounces, hulled

Instructions

  • In a small mixing bowl, add the gelatin and water. Whisk for 30 seconds to combine and bloom the gelatin.
  • Add the sugar (if using) and coconut milk. Whisk until fully incorporated.
  • In a blender or food processor, puree the strawberries until smooth.
  • Pour the strawberry puree into the gelatin mixture and stir to combine.
  • Transfer the mixture to a small saucepan and place over medium-low heat.
  • Whisk constantly for 4 to 5 minutes, until the gelatin has fully dissolved and the mixture has slightly thickened. Do not boil.
  • Remove from heat and pour the pudding into individual serving dishes or ramekins.
  • Refrigerate for at least 3 hours, or until fully set.
  • Serve chilled, plain or topped with whipped cream and chopped fresh strawberries.

Notes

For a dairy-free version, use full-fat coconut milk. For a richer texture, swap in half-and-half or cream.
Adjust sweetness based on the ripeness of your strawberries. You can add more sugar or use honey or maple syrup to taste.
This pudding makes a great layer for trifles or parfaits.
Store covered in the refrigerator for up to 3 days.
