- 1 ½ tablespoons unflavored gelatin
- 2 tablespoons water
- 1 ½ tablespoons white sugar optional
- ½ cup coconut milk or whole milk
- 3 cups fresh strawberries about 12 ounces, hulled
In a small mixing bowl, add the gelatin and water. Whisk for 30 seconds to combine and bloom the gelatin.
Add the sugar (if using) and coconut milk. Whisk until fully incorporated.
In a blender or food processor, puree the strawberries until smooth.
Pour the strawberry puree into the gelatin mixture and stir to combine.
Transfer the mixture to a small saucepan and place over medium-low heat.
Whisk constantly for 4 to 5 minutes, until the gelatin has fully dissolved and the mixture has slightly thickened. Do not boil.
Remove from heat and pour the pudding into individual serving dishes or ramekins.
Refrigerate for at least 3 hours, or until fully set.
Serve chilled, plain or topped with whipped cream and chopped fresh strawberries.
For a dairy-free version, use full-fat coconut milk. For a richer texture, swap in half-and-half or cream.
Adjust sweetness based on the ripeness of your strawberries. You can add more sugar or use honey or maple syrup to taste.
This pudding makes a great layer for trifles or parfaits.
Store covered in the refrigerator for up to 3 days.
