Ingredients

  • 2 cups fresh or frozen strawberries
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice optional
  • 1-2 tablespoons honey optional, to taste

Instructions

  • Place strawberries in a small saucepan over medium-high heat, stirring occasionally.

  • Mash with a spoon or potato masher. Stir in chia seeds and lemon juice.

  • Continue cooking for 2 minutes, then add honey if desired. Stir well.

Notes

This recipe makes about 1 cup of jam, enough to fill one 8-ounce jar or two 4-ounce jars.
For a smoother texture, use an immersion blender before adding chia seeds.
This jam works with nearly any juicy fruit — feel free to experiment.
Adjust chia seeds to achieve your desired consistency.
