2 to 2.5lbsSmithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet
2tablespoonsvegetable oildivided
1large onionchopped
2garlic clovesminced
4medium potatoespeeled and cut into quarters
1 ½cupsof mushroomsoptional
2 to 3carrotsdiced
2celery stalksdiced
¾teaspooncaraway seeds
3tablespoonsbalsamic vinegar
4cupsof chicken broth
Instructions
Press Sauté button on your electric pressure cooker and let it heat, then add one tablespoon oil.
Cut the pork into bite-sized chunks and add the pork to the pot. Brown on all sides.
Remove the pork.
Add the remaining oil, onions, and garlic to the pressure cooker. Stir until onions are tender.
Add caraway seeds. Stir.
Add the remaining ingredients, return the pork to the pot and stir.
Seal the pressure cooker. Press “Cancel” to stop Sauté mode.
Press the Manual Button, set time for 25 minutes. Make sure the valve is turned to “sealing.”
When the timer beeps, let the pressure release naturally for at least 10 minutes. Season with salt and pepper to taste.
Notes
If you want, you can replace one cup of the broth with a bottle of dark ale to give the stew a deeper flavor.The mushrooms are optional. They do add a great, meaty texture but the dish is just as tasty without them.
