Equipment

  • Measuring cup and spoon

Ingredients

  • 1 can Palmini linguine noodles drained and rinsed well
  • ¼ cup cucumber Chopped
  • ¼ cup red bell pepper chopped
  • ¼ cup red onion chopped
  • 1 hard boiled egg chopped

For the Dressing

  • ¼ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon red wine vinegar
  • 1 teaspoon Swerve confectioners sugar substitute
  • ½ teaspoon Dijon mustard
  • Pinch garlic powder
  • salt and pepper to taste

Instructions

  • Place all of the dressing ingredients into the bottom of a large mixing bowl, and stir to combine well.
  • Add the remaining ingredients to the mixing bowl, and toss to coat and combine well.
  • Serve immediately, or chill first if preferred.
