Ingredients

  • 1 ½ cups almond flour
  • 1 ½ cups shredded mozzarella cheese
  • 2 eggs
  • 1 tablespoon Swerve granular sugar
  • 2 ounces cream cheese
  • 1 tablespoon baking powder
  • cup blueberries

Instructions

  • Preheat oven to 400 F and line a large baking sheet with parchment paper.
  • In a microwave, melt the mozzarella and cream cheese together in 30-second intervals.

  • After mixing the mozzarella and cream cheese, add the eggs.

  • Add the dry ingredients and mix using your hands until fully combined to form a dough ball.
    1 ½ cups almond flour, 1 tablespoon Swerve granular sugar, 1 tablespoon baking powder
  • Slowly fold in the blueberries. Be careful not to crush them.

  • Divide the dough into equal pieces and put no more than six to eight of them in a pan. Poke a hole in the center and round them out to form bagels.
  • Brush each bagel with a little olive oil.
  • Place in the oven and bake for 10-15 minutes. Keep an eye on the bagels starting at 10 minutes. You want them to brown and also to cook all the way through.
  • Remove the bagels from the oven and let them cool on a wire rack for 10-15 minutes before serving.

    • Don’t crowd the pan with too many bagels to bake them evenly. Make sure they’re not touching each other in the pan. If you’re making double or triple this recipe, you should bake a few bagels at a time. 
    • Make sure to knead the dough well to make it uniform. If you’re having problems kneading because the dough is too sticky, you can put it in the refrigerator for about 30 minutes to make it less sticky. Or, put some oil in your hands and proceed to work with the dough. 
    • You can use a food processor or stand mixer fitted with a dough hook attachment to knead the dough consistently and thoroughly.
    • Before baking, brush the tops of the bagels with an egg wash, which is beaten egg with a little water. This gives the bagels a shiny, golden-brown crust.
    • It is ideal to let the bagels cool down on a wire rack. This helps prevent the bottoms from becoming soggy.

Yes, as bagels freeze very well. You can cut the bagels in half then store them inside Ziploc bags or wrap them in aluminum foil before freezing. If stored in the freezer, they can last for up to eight months.
