Ingredients

  • 3 cups diced chicken cooked
  • ½ yellow onion diced
  • 1 can cream of chicken soup
  • ¾ cup mayo
  • 1 cup shredded cheese
  • 2 cups peas and carrots frozen
  • 12 oz egg noodles cooked and drained
  • 25 Ritz crackers / 1 cup crumbs
  • ¼ cup butter

Instructions

  • Combine the diced chicken, onion, cream of chicken soup, mayo, sour cream, shredded cheese, peas, and carrots in a mixing bowl.
  • Stir until creamy and fully blended. Gently fold in the cooked noodles, being careful not to break them.
  • Transfer the mixture to a casserole dish and spread evenly across the bottom.
  • Using a blender or food processor, crush the Ritz crackers into fine crumbs. Sprinkle the crumbs evenly over the casserole mixture. Melt the butter and drizzle it over the cracker crumbs.
  • Bake at 350°F for 35-45 minutes until the crumbs turn crispy and golden brown. Allow to rest for 15 minutes before serving.

Notes

Use rotisserie chicken for easiest prep. Don't overmix noodles or they'll break apart. Butter drizzle creates golden, crispy topping. Let rest 15 minutes before serving for best texture.
