- 3 tablespoons olive oil divided
- 2 large onions finely sliced
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 baguette
- ¾ cup ricotta cheese
- crumbled goat cheese or balsamic glaze for garnish optional
Heat 1 ½ tablespoons of olive oil in a large skillet over medium heat.
Add the sliced onions and cook for 15 to 20 minutes, stirring occasionally, until golden brown and soft. Add more oil as needed to prevent burning.
Stir in the balsamic vinegar, thyme, salt, and pepper. Cook for 2 more minutes, then transfer the onions to a bowl.
Slice the baguette into 1 ½-inch rounds. Brush both sides of each slice with the remaining olive oil.
Wipe out the skillet and toast the baguette slices for about 4 minutes per side, or until golden brown.
Spread about 1 tablespoon of ricotta on each toasted baguette slice.
Top each crostini with a spoonful of the caramelized onions.
Optional: sprinkle with goat cheese or drizzle with balsamic glaze before serving.
