Ingredients

  • 3 tablespoons olive oil divided
  • 2 large onions finely sliced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 baguette
  • ¾ cup ricotta cheese
  • crumbled goat cheese or balsamic glaze for garnish optional

Instructions

  • Heat 1 ½ tablespoons of olive oil in a large skillet over medium heat.
  • Add the sliced onions and cook for 15 to 20 minutes, stirring occasionally, until golden brown and soft. Add more oil as needed to prevent burning.
  • Stir in the balsamic vinegar, thyme, salt, and pepper. Cook for 2 more minutes, then transfer the onions to a bowl.
  • Slice the baguette into 1 ½-inch rounds. Brush both sides of each slice with the remaining olive oil.
  • Wipe out the skillet and toast the baguette slices for about 4 minutes per side, or until golden brown.
  • Spread about 1 tablespoon of ricotta on each toasted baguette slice.
  • Top each crostini with a spoonful of the caramelized onions.
  • Optional: sprinkle with goat cheese or drizzle with balsamic glaze before serving.

Notes

Substitute ricotta with creamy goat cheese for a tangier flavor.
For a puff pastry version, use a mini muffin tin and pre-cut puff pastry squares.
Serve warm or at room temperature. These can be prepped ahead and assembled just before serving.
