Preheat the oven to 425°F.
In a shallow dish, place the flour and stir in salt, pepper, and Italian seasoning. Combine well.
In a second shallow dish, crack an egg and whisk it.
Bread crumbs should go in the third shallow dish.
Dredge each pork chop slice in the flour mixture, then the eggs, then the panko. Do so one at a time.
After breading, set pork chops on a clean plate until all pieces are fully coated.
Pour oil into a skillet over medium heat.
Once the oil is hot enough, cook two pork chops at a time and brown on each side. Each side should be cooked for about 2-3 minutes.
Transfer the pork chops to the prepared 9"x13" casserole dish.
Bake for 10-15 minutes until the meat thermometer reads 145°F.
