Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 tablespoon + ¼ teaspoon baking powder
  • 1 ¼ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter melted and cooled
  • 1 ¼ cups sugar
  • 3 large eggs
  • ½ cup milk
  • 3 teaspoons vanilla
  • 2 cups blueberries I thawed frozen blueberries, but fresh is great too!
  • 1 tablespoon coarse decorating sugar

Instructions

  • Mix the sugar, baking soda, baking powder, salt, and flour in a large bowl.
  • Melt the butter and mix with the milk, eggs, and vanilla.
  • Gradually mix the dry ingredients into the wet mixture until a smooth batter forms.
  • Once batter forms, fold in 1 ½ cups of the blueberries.
  • Scoop batter into jumbo muffin liners, and fill ⅔ of the line.
  • Top the batter with a few loose berries from the remaining berries. Press into the batter slightly.
  • Sprinkle batter with a pinch of decorating sugar.
  • Place muffins in the air fryer basket and cook at 375°F for 8 minutes, then reduce heat to 250° for 17 minutes. Make sure muffins are fully cooked using a toothpick pierced in the center of the muffin. If the toothpick has uncooked batter when removed, continue to cook 1 minute at a time until fully cooked.
  • Let muffins cool on a rack before removing them from liners.

Notes

  • Use a toothpick to check if the muffins are done. If it comes out clean they are ready.
  • You can use either fresh or frozen blueberries for this recipe.
  • Make sure not to overfill the silicone muffin cups.
  • If you don't have decorating sugar, you can use clear sprinkles or regular granulated sugar instead.
  • Switch up the flavor by using almond extract instead of vanilla.
