Ingredients

  • 3 tablespoons butter
  • 8 ounces sliced mushrooms
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 3 tablespoons flour
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • 1 ½ cups chicken broth
  • 1 ½ cups half and half
  • 1 cup shredded smoked gouda
  • 4 cups cooked cubed chicken
  • 10 ounces frozen green beans thawed
  • 2 cups fried onions divided

Instructions

  • Preheat the oven to 350 degrees. Grease the 9x13 casserole dish with nonstick cooking spray.
  • In a medium skillet over medium high heat, melt the butter. Add the mushrooms and onion to the skillet. Cook for 5 to 6 minutes or until the vegetables are softened.

  • Stir in the garlic.

  • Add the flour, salt, and pepper to the medium skillet and stir everything to coat the onions and mushrooms.

  • Once the flour is fully incorporated, add in the chicken stock. Continue stirring until the mixture begins to thicken.

  • Add the half and half. Reduce the heat and stir until the sauce has thickened enough to coat the back of a spoon. Add Gouda and stir to combine.

  • In a large bowl, mix the green beans, chicken, and 1 cup of fried onions.

  • Mix in the sauce and stir until everything is evenly coated.
  • Transfer the mixture to the casserole dish and spread it evenly.
  • Bake uncovered for 30 minutes.
  • Top the casserole with the remaining fried onions and bake for 5 minutes more.

Notes

Prepare the casserole ahead of time and refrigerate it to absorb flavor, making it more delicious. Cover tightly with plastic wrap or foil and place in the refrigerator until ready to bake.
