Apple Crumble Muffins

These jumbo Apple Crumble Muffins are moist and soft, packed with apple pieces and  cinnamon, crowned with a delicious streusel topping.

Ingredients

Muffins:

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 1/2 cup Butter softened
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 1/2 cup Greek Yogurt
  • 1 teaspoon Vanilla Extract
  • 2-3 Small Apples cored and chopped

Streusel Topping:

  • 1/4 cup All-Purpose Flour
  • 1 teaspoon Cinnamon
  • 1 Tablespoon White Sugar
  • 3 Tablespoons Brown Sugar
  • 3 Tablespoons Melted Butter

Instructions

  • Preheat oven to 400° F.
  • Line a jumbo muffin tin with large muffin liners and set the tin aside.
  • In a small bowl, whisk together the all-purpose flour, baking powder, salt, baking soda and cinnamon until well-combined. Set the bowl aside.
  • In a large bowl, beat together the butter and brown sugar until light and fluffy, for about 2 minutes.
  • Beat in the eggs, Greek yogurt, and vanilla extract until well-combined.
  • Add the dry ingredients to the batter, and then stir in the chopped apples.
  • Distribute the muffin batter evenly among the prepared muffin liners, filling them as close to the top as possible.
  • For the streusel, stir together all of the ingredients and then sprinkle on top of the muffins.
  • Bake for 8 minutes, then reduce the heat to 350° F and continue to bake for 15-20 minutes until an inserted toothpick comes out clean.

Notes

  • Start with room temperature ingredients. They will be easier to combine and will give the best texture when baked.
  • Use an ice scream scoop to portion the batter. 
  • Weigh the ingredients using a kitchen scale for more accurate measurements. This would be helpful especially for beginners.
  • You might also want to use an oven thermometer to ensure that your oven is at the correct baking temperature.
  • Do not overmix the batter. Never ever overmix any batter for any baked goods that you'll make. Otherwise, they'll turn out tough, dry, and gummy. Mix them just until combined.
