Mayo Parmesan Chicken

Ingredients

  • 1 pound chicken breasts
  • 1/2 cup mayo
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2-3 cloves garlic minced

Instructions

  • Preheat oven to 375 degrees.
  • Prepare chicken breasts and place in a baking dish.
  • In a small bowl, mix mayo, salt, pepper and minced garlic.
  • Spread the mayo mixture on top of the chicken.
  • Top with the parmesan cheese.
  • Cook in oven for 30 minutes or until chicken is cooked through and cheese is golden.
  • Serve hot with extra parmesan.

Notes

  • Be sure to cover your baking dish lightly with aluminum foil for easy clean up or spray the baking dish with nonstick cooking spray.
  • Be careful not to overcook your chicken; you don't want it to dry out.
  • If you like your cheese extra crispy, you can turn on the broiler for the last few minutes of baking time. Just keep an eye on it so that it doesn't burn!
  • This recipe is perfect for those on a low carb or keto diet.
  • Use a meat thermometer to make sure that your chicken reaches an internal temperature of 165 degrees F in the thickest part.
  • For added crunch, you could sprinkle some bread crumbs on top of the chicken before you bake it.
