Air Fryer Chicken Fried Rice

Ingredients

  • 2 cups steamed rice
  • 1/2 cup diced onion
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon mixed sesame seeds
  • 1 teaspoon ground ginger
  • 1 cup cooked cubed chicken
  • 2 eggs
  • 1 cup peas and carrots frozen

Instructions

  • In a large bowl, mix rice, onion, soy sauce, sesame seeds, sesame oil, ginger and chicken.
  • Place mixture in a dish to fit your air fryer basket. Cook at 350 for 5 minutes.
  • Remove, stir the rice, add two scrambled eggs to the top. Cook for 3 minutes.
  • Remove and fold in peas and carrots. Cook for 5 minutes.
  • Let cool and enjoy. Garnish with more sesame seeds and chopped green onions.

Notes

  • Sesame oil really gives this fried recipe a tasty flavor. However, you can leave it out if you are not a fan of the flavor. 
  • White rice really works best for this recipe. Brown rice will have a crunchier texture.
  • I recommend using cold rice or plain leftover rice. So, if you don't have leftover rice, I suggest that you make the steamed rice ahead of time and store it in the fridge until you are ready to make this recipe. 
  • You can use any type of neutral flavored cooked chicken in this recipe. Or you can cook the chicken in your favorite soy sauce or teriyaki sauce for more flavor.
  • If you use a gluten free soy sauce like tamari then you will have a gluten-free recipe that your entire family will enjoy.  
  • Increase the flavor of this recipe by adding a dash of garlic powder to the rice when you add the soy sauce and other seasonings.
