- 2 Cups diced and peeled apples
- ½ Cup applesauce
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground star anise optional
- ¼ teaspoon ground clove
- ½ teaspoon vanilla extract
- 1 ½ Cups flour
- ¼ Cup butter
- ¼ Cup oil
- 2 Eggs
- 1 Egg yolk
- ½ Cup sugar
- ½ Cup chopped nuts and almonds
In a bowl beat the oil, butter, eggs and egg yolk. Add the applesauce, the spices, and the sugar. Slowly incorporate the flour and mix until there are no lumps left. Mix in the diced apples.
Grease and flour a cake pan (I used a 7” one). Pour the batter into the prepared cake pan. Top with the chopped nuts and with the help of a toothpick or knife swirl the batter and the nuts.
Add 1 cup water to the Instant Pot and cover the pan with a paper towel. Tightly wrap it with aluminum foil. Place the cake pan on the trivet and place the trivet into Pot.
Press manual and adjust for 60 minutes. Let it release all the steam naturally before opening the lid.
Carefully take out the trivet and unwrap the pot. Let it cool down before serving.
