Prepare your kale by rinsing and removing the leaves from the spine. Chop into smaller pieces and set aside.
Rinse and dice your mushrooms into smaller pieces and set aside.
In a food processor, add your eggs, minced garlic, cream cheese, sour cream, and all but 1 ounce of your Gruyere cheese.
Season with salt and pepper to taste, and blend until you get a smooth mixture.
Pour equal amounts of your mixture in each of the 6 muffin liners.
Preheat your air fryer to 300°F for around 5 minutes.
Add a pinch of chopped kale and diced mushrooms to each muffin liner. Top your egg bites mixture with the rest of your shredded Gruyere cheese.
Cook your egg bites in the air fryer for 8-10 minutes at 300°F.
Once done, let them rest and cool down. When they're cool to the touch, pop the egg bites out of your liners and enjoy!
