Air Fryer Kale and Mushroom Egg Bites {Starbucks Copycat Recipe}

Equipment

  • 6 Silicone muffin liners
  • Food processor
  • Knife

Ingredients

  • 1 cup fresh kale chopped
  • 1/4 cup mushrooms diced
  • 6 eggs
  • 1 cup Gruyere cheese shredded
  • 2 teaspoons garlic minced
  • 2 ounces cream cheese softened
  • 1/4 cup sour cream
  • salt and pepper to taste

Instructions

  • Prepare your kale by rinsing and removing the leaves from the spine. Chop into smaller pieces and set aside.
  • Rinse and dice your mushrooms into smaller pieces and set aside.
  • In a food processor, add your eggs, minced garlic, cream cheese, sour cream, and all but 1 ounce of your Gruyere cheese.
  • Season with salt and pepper to taste, and blend until you get a smooth mixture.
  • Pour equal amounts of your mixture in each of the 6 muffin liners.
  • Preheat your air fryer to 300°F for around 5 minutes.
  • Add a pinch of chopped kale and diced mushrooms to each muffin liner. Top your egg bites mixture with the rest of your shredded Gruyere cheese.
  • Cook your egg bites in the air fryer for 8-10 minutes at 300°F.
  • Once done, let them rest and cool down. When they're cool to the touch, pop the egg bites out of your liners and enjoy!

Notes

  • Don't overcrowd your air fryer. The air inside must circulate well to cook your food evenly. Overcrowding can prevent that and may result in uneven cooking.
  • Keep an eye on your food. While this recipe has a set temperature and time for cooking, this may not be exact. Some factors like crowding and air circulation can affect how evenly your egg bites cook. So, keep an eye on your food to avoid under or over-cooking.
  • Make sure your air fryer is thoroughly clean before cooking your egg bites in it. If some bits of grease or food are left behind, it may get burnt and produce smoke when you cook your egg bites. This will quickly leave an unwanted smoke flavor in your dish. Or better yet, use air fryer paper lines or parchment paper.
