Prepare your vegetables. Chop your potatoes to 1" cubes, and your yellow onion to 1" slices. Next, parboil the potatoes and carrots to make cooking them in the air fryer faster.
Add the potatoes, carrots, and onions to a large bowl.
Add half the required amount of olive oil and spices, and then mix thoroughly.
Add the half chicken to the bowl. Make sure to coat it well with the remaining oil and spices. Set aside for 5 minutes.
Preheat your air fryer to 350°.
Transfer all the vegetables and the chicken from the large mixing bowl into the air fryer basket. Make sure to lay the chicken breast facing down on top of the vegetables.
Cook at 350° for 30 minutes, making sure to flip the chicken halfway through.
Once the time is up, check if your chicken is thoroughly cooked. Fry longer if needed.
Take out the chicken and vegetables, serve on a plate, and enjoy.
