Ingredients

  • 4 Chicken thighs Bone in and skin on
  • 1 ⅓ cups Parmesan cheese grated
  • 1 cup Caesar dressing
  • ½ cup Sour cream
  • 1 cup Pork rind crumbs
  • Pepper to taste

Instructions

  • Preheat the oven to 400 degrees F.
  • Season the chicken thighs with pepper, and arrange them in a 9x9 well-greased baking dish.
  • In a bowl, mix the Caesar dressing, parmesan cheese and sour cream.
  • Spread the mixture on the chicken placed in the baking dish.
  • Cover the chicken with pork rind crumbs.
  • Bake the chicken for 40 minutes, or until cooked through.

Notes

  • For an incredibly easy boost to the flavor, add the chicken to the Caesar dressing mixture and let it marinate for 30 minutes to an hour before you start to make the keto chicken thighs.
  • This chicken thighs recipe features creamy chicken juices, so let it sit after baking to allow the juices to seep into the meat again.
  • To get extra creamy chicken thighs during baking, baste them with more dressing halfway through cooking. This will make for a more tender chicken.
