  • ½ Large cucumber sliced
  • cup Red onion chopped
  • 1 Avocado diced
  • 1 Roma tomato diced
  • ¼ cup Parsley chopped
  • 2 teaspoons Minced garlic
  • 1 teaspoon Italian seasoning
  • Juice from ½ a lemon
  • Salt and pepper to taste

Instructions

  • Put all of the chopped ingredients into a mixing bowl.
  • Add the seasonings and stir the salad until well-combined.
  • Serve the salad. You may do so immediately or after chilling it, depending on your preferences.

Notes

  • Avoid a watery salad by adding some salt to the sliced cucumbers. Pat the cucumbers dry with paper towels before adding them to the mix.
  • If you prefer your salad to be served chilled, keep the avocado separate before serving to ensure it hasn’t turned brown yet before eating.
