What you need:

2 to 3 cups turkey

2 tablespoons olive oil

2 stalks celery

1 onion

8 oz pkg cream cheese

3 small carrots

½ cup sour cream

2 cups chicken stock

½ teaspoon ground sage

1 teaspoon thyme leaves

16 oz package egg noodles

2 cups dry stuffing mix

Cook the noodles

First, we need to cook the egg noodles. Follow the directions on the package.

Saute vegetables

Saute onions, celery and carrots in a large skillet. Cook them for about 5 minutes, until the vegetables are tender.

Create the sauce

Add cream cheese, sour cream, chicken broth, sage and thyme. Stir until melted. Then, add the turkey and stir.

Assemble

Pour turkey, vegetable and noodle mixture into a greased casserole dish. Then, combine stuffing mix and water in a bowl and spread over the top.

Bake

Cover the casserole with foil and bake at 350 for 20 mins. Remove the foil and bake for another 5 to 10 mins to brown the stuffing.
