If you enjoy sweet potato casserole, you’re going to love this cupcake version of that amazing dish!

What you need:

1 box white cake mix

3 large eggs

1/3 cup melted butter

1/4 cup maple syrup

1 medium sweet potato

1/4 cup milk

1/4 cup brown sugar

Bake cupcakes

Mix cupcake ingredients. Bake for 18-22 minutes, until a toothpick inserted in the center of a cupcake comes out clean.

Make the frosting

Mix the frosting ingredients. Beat on high for 1-2 minutes until smooth. Chill frosting.

Prepare topping

Mix topping ingredients. Bake the mixture and let it cool. Place marshmallows under the broiler until browned.

Assemble cupcakes

Pipe the frosting onto each cupcake. Gently roll frosted side in crumble the crumble topping.

Finalize and serve

Place a browned marshmallow on top of each cupcake to finish and it's ready to be served!
