Corn Chowder

This Instant Pot Corn Chowder is everything a chowder should be. It’s hearty, comforting, and a perfect balance of contrasting flavors.

What you need:

bacon

onion

bell pepper

jalapeno peppers

chicken broth

russet potatoes

frozen corn

heavy cream

Saute

Set the Instant Pot to saute and add chopped bacon. Cook until the bacon starts to brown.

Add Veggies

Add the onion, red bell pepper and jalapeno pepper. Cook until peppers are tender.

Deglaze Pot and add Ingredients

Remove bacon grease from the pot. Pour the chicken broth and scrape any bits of bacon. Add potatoes and corn.

Pressure Cook

Set the Instant Pot to pressure cook for 7 minutes. Do a natural release when finished cooking.

Blend

Remove one cup of ingredients from the pot. Use immersion blender to blend ingredients in pot. Return cup.

Add Heavy Cream 

Add heavy cream and remaining corn and allow to cook on “Keep Warm” setting for 10 minutes.
